Fresh Finds at Save Mart Supermarket: Mix-and-Match #Sale - Carne En Su Jugo #Recipe #Shop #CB (1)

I always try to get to the mix-and-match Save Mart sales since we are a large family of seven, and are all meat eaters. We love meat. We love savings. I love to cook and [they] love to eat! My #freshfinds at Save Mart this week was Cross Rib Roast meat. I used it to make a family-favorite dish – Carne En Su Jugo. (Meat In It’s Juice – Doesn’t sound as yummy once translated, but trust me – it is!) Save Mart will have a buy one get one free sale running from 11/13 thru 11/26 on any of the following mix-and-match items:

○ Riverside or Honeysuckle White Frozen Turkeys

○ Cooks Ham Portions

○ Master Cut Beef Cross Rib Roasts

○ Pork Shoulder Roasts

○ Honeysuckle Turkey Breasts

CARNE EN SU JUGO – RECIPE (My secret never-before-told family delight!)

Serves 6-8. Calories? Um… There’s a lot of bacon, okay?!

Ingredients:

  • 3lbs of Cross Rib Roast or Sliced Meat
  • 15-20 small – medium Tomatillos (green tomatoes) Note* There are extra small, small, medium, and large in sizes.
  • 2 packages of bacon
  • 2 garlic cloves
  • 4-10 fresh jalapenos cut in half (For a spicier dish use more or less for a milder outcome. Note that jalapenos can be tricky because one may be very “hot” while another is rather mild, so test the blended mixture as you add the jalapenos. The heat will also increase a little as the dish is cooked so keep that in mind)
  • 2 small or 1 large white onion
  • 1 bunch of cilantro
  • salt to taste
  • 2 tablespoons of chicken bullion (powder)
  • 8 cups of water
  • 1 pot of cooked pinto beans (wash pinto beans, boil water, add salt, add beans to boiled water, add salt, cover and simmer for about 90 minutes or until tender) [2 parts water, 1 part beans – add water as needed due to reducing]

How to Make this YUMMY meal:

  • Cut the two packages of bacon into diced pieces. Don’t worry about how it looks. Cook it in a pan until the bacon is crispy. Remove bacon from pan and set aside. Discard most of the bacon grease, leaving just enough to coat the bottom of the pan you used to cook the bacon.

  • Remove excess fat from the cross rib meat. Slice and dice. Brown the meat in the bacon pan on medium heat. The natural meat juices will add liquid to the pan. Do not remove or try to reduce the liquid.
  • Put the browned meat and natural juices into a 3-5 qt. pan. Add 6 cups of water. Bring to a boil then turn down to a simmer.

  • Wash and cut the tomatillos into 1/2 or 1/4 pieces. Add to blender.
  • Wash the bunch of cilantro, cut off the excess stems, and add to blender.
  • Add the garlic, onion, and 2 tablespoons of chicken bullion powder.
  • Add the jalapenos (washed, cut in half, to desired “heat”) and salt to taste.
  • Add 2 cups of water and blend for 1-2 minutes until completely blended.
  • Add the mixture from blender to the pan with the meat.
  • Add the bacon you set aside from earlier. (Add it all or save some for a crispy topping to the dish)

  • Bring the pan to a boil again. As soon as it boils, reduce to a simmer, cover, and cook at a low simmer for about 45 minutes or until the meat is tender but not breaking apart.
  • Add beans to the bottom of a bowl.
  • Using a slotted spoon, removed desired meat/bacon and place over beans.
  • Pour desired amount of liquid from pan over the meat and beans.

Just like Save Mart, mix-and-match your toppings. Some people like the dish just like this, while others prefer to top it with a little diced onion, fresh cilantro, and fresh squeezed lime juice. In my home, we love to cook with fresh ingredients. Save Mart always has #freshfinds to throw together a healthy and fabulous family meal.
